Foam fermentation


Once the assemblage has been done, the various cuvées are embottled. We then add liqueur de tirage (drawing liqueur) made of sugar and selected yeasts. This causes the second fermentation in the bottle itself at that stage. We call that process '' prise de mousse '', which is foam fermentation.


The ''drawing'' can't be carried out before the 1st of January after the harvest.
